Chocolate truffles

Truffles are a flavored "ganache" ball covered with some topping such as chocolate shell, nuts, cocoa, sugar, etc.

Traditionally, they’re coated in things like cocoa powder and chopped nuts. At the heart of chocolate truffle is ganache of a tender and velvety smooth combination of chocolate and cream that melts like a dream in our mouth. Definition of ganache is a glaze, icing, sauce, or filling for pastries, made from chocolate and cream.

Chocolate truffles can also be flavored with a praline paste, which is a mixture of caramelized sugar and almonds or vanilla, as well as cinnamon or bourbon.

Truffles are named for the fungus they supposedly look like – the bumpy lumps Brillat-Savarin called “the diamond of the kitchen”. Chocolate truffles are the real thing – just chocolate not fungus.
