Cadbury first added milk to eating chocolate in 1897. They weren’t the first to do it but their ‘milk chocolate’ proved to be a big seller.
By 1900 Hershey’s milk chocolate candy bar had begun the industry that would make Americans think of chocolate as something to eat.
Milk chocolate is probably the most popular of the chocolate products. It is sold directly to the consumer in a variety of solid bars or chocolate coated candy bars or other coated candies. It is combination of chocolate liquer, additional cocoa butter, sugar milk or cream and a little vanilla.

History of Cadbury chocolate
John Cadbury started Cadbury Limited in 1831. He first opened a grocery store in Birmingham in 1824 before selling chocolate and cocoa beverages in 1831. In 1861, George Cadbury and his brother Richard inherited the company from their parents with only 12 employees and built it into one of the world’s largest.
An important turning point for the company occurred in 1866, when it introduced a process for pressing the cocoa butter from the coca bean.
The addition of cocoa presses at Cadbury produced a reduced fat cocoa powder that the company named Cocoa Essence, which became an immediate success. The process was considered a trade secret.
By 1879 the firm had grown so successful that George Cadbury built what came to be known as the ‘factory in a garden’ on a parklike property in Bourneville, England.
Cadbury’s Dairy Milk chocolate was developed and launched in the early 1905 and similar products by many other manufacturers followed. It remains a favorite of UK customers to this day.
In 1916, Cadbury decided to package the products into ½ lb, rather plainly decorated boxes and soon had a runaway success on their hands from the much more popular-tasting Milk Tray.

Ingredients in chocolate milk bar
Chocolate liquor, pure fluid whole milk and powdered sugar are the basic ingredients for milk chocolate bar.
The proportion of cocoa liquor in the final product determines how dark the chocolate is. From a nutritional standpoint the darker a chocolate is, the better because it contains a higher percentage of cocoa.
To prepare chocolate bars, the cocoa powder is mixed with other ingredients (sugar, milk, nougat, vanilla flavor); the mixture is refined and freed from lumps; it is then ripened at different temperatures.
Vanilla flavor is the most common basic flavoring to be mixed into the chocolate mixture. It is obtained by using vanillin.
The mixture is then passed through a series of large steel roll refiners, where an intense shearing and rubbing action reduces the mass to a uniform paste that is so smooth that the coarse particles will be less than 50 u in size.
Chocolate bars and candy can be filled with flavored fondants, liquor-soaked fruit, dry, roasted, or candied, liquors, etc. Milk chocolate is creamy but the added milk also adds calories and fat.

Chocolate actually is good for us. This is the nutrition news we have all been waiting for. And chocolate actually have a health benefits.
Recent studies show that cocoa and dark chocolate with a high cocoa content contain many heart-healthy antioxidants. They contain a compound called flavonoids which may help prevent the oxidation of LDL cholesterol and raise HDL cholesterol levels in the blood. There is also some evidence that these flavonoids may prevent certain cancers.
However, not all chocolate have these health benefits. The healthy flavonoids found in chocolate are found in the cocoa butter and cocoa solids. Milk chocolate is diluted with milk and sugar and contains little amounts of these substances, therefore providing fewer health benefits.
The darker the chocolate, the higher the cocoa content and the more antioxidants it contains. The cocoa butter is quite pricey so less expensive brands will replace the cocoa butter with milk fats and hydrogenated oils which are bad for health. Look for high quality chocolates with their main ingredients being cocoa butter and cocoa solids. Unsweetened cocoa powder is one of the purest forms of chocolate can be eaten and is lower in fat and calories than other chocolates.
Although this is great news for all chocolate lovers, don’t forget that most chocolate does still contain sugar and saturated fat. An ounce of chocolate contains around 135 calories.
